Awarded as the revelation bar, Exímia, located in Itaim Bibi and owned by brothers Gabriel and Nicholas Fullen, features the cuisine of Paraná-born Manu Buffara, who runs a renowned restaurant under her name in Curitiba and is set to open Ella in New York. But the main attraction there is the cocktails crafted by the award-winning bartender Márcio Silva, who is also a partner. ‘Exímia was created, in some way, to showcase Brazil as seen through Márcio’s lens to the foreigners who come here.’ He is a great professional with one of the most significant personalities on the international scene.
Exímia is a space where the pursuit of perfection in every detail is reflected in the cocktail menu, designed by Márcio Silva. It features a selection of signature cocktails, crafted with high-quality Brazilian ingredients and based on deep anthropological and historical research into classic cocktails. The use of natural fiber filtration gives the drinks a unique texture, making each sip a memorable experience.
As for the cuisine, the space benefits from the collaboration of acclaimed chef Manu Buffara, who has created a menu that combines her vast international experience with local Brazilian ingredients, crafting dishes that perfectly complement the signature cocktails.
